Grilled Portobello Mushroom
and Vegetable Sandwich

This is an excellent plant-based sandwich and is the best Portobello mushroom sandwich I have ever had. And, I have tried a lot of them!
Serves 4
INGREDIENTS
1/4 cup balsamic vinegar
1/2 cup olive oil
2 large cloves garlic, minced
1 Tbsp lemon juice
1/2 tsp salt
Black pepper to taste
4 small or 2 large portobello mushrooms- cut into thick slices
1 red or orange bell pepper- cut into 3-inch strips
1 medium sweet onion- cut into thick slices
4 crusty ciabatta rolls
4 slices of pepper jack cheese
METHOD

Mix vinegar, olive oil, garlic, lemon juice, salt and pepper in large bowl.

Add all sliced vegetables and let marinate for 20 mins.

Remove vegetables from the marinate and grill using a grill basket or copper cooking sheet. Cook until vegetables are soft and lightly charred.

Slice rolls in half and heat according to package directions.

Open up the rolls and place a piece of cheese on the bottom and top with grilled vegetables

Mushrooms are not a nutrition powerhouse but they do provide a small amount of protein, a good amount of Potassium and a significant amount of the trace minerals Copper and Selenium.
