Grilled Portobello Mushroom

and Vegetable Sandwich

This is an excellent plant-based sandwich and is the best Portobello mushroom sandwich I have ever had.  And, I have tried a lot of them!

Serves 4

INGREDIENTS

1/4 cup balsamic vinegar

1/2 cup olive oil

2 large cloves garlic, minced

1 Tbsp lemon juice

1/2 tsp salt

Black pepper to taste

4 small or 2 large portobello mushrooms- cut into thick slices

1 red or orange bell pepper- cut into 3-inch strips

1 medium sweet onion- cut into thick slices

4 crusty ciabatta rolls

4 slices of pepper jack cheese

METHOD 

  • Mix vinegar, olive oil, garlic, lemon juice, salt and pepper in large bowl.

  • Add all sliced vegetables and let marinate for 20 mins.

  • Remove vegetables from the marinate and grill using a grill basket or copper cooking sheet.  Cook until vegetables are soft and lightly charred.

  • Slice rolls in half and heat according to package directions.

  • Open up the rolls and place a piece of cheese on the bottom and top with grilled vegetables

Mushrooms are not a nutrition powerhouse but they do provide a small amount of protein, a good amount of Potassium and a significant amount of the trace minerals Copper and Selenium.
