4 tsp. lemon juice

3 tsp. brown sugar

1/2-1 cup water (enough to cover pears halfway in baking dish)

1/4 cup panko breadcrumbs

1/2-1 tsp. cinnamon

1/2 cup whole milk ricotta cheese

  • Slice pears in half lengthwise and place cut side up in a glass baking dish.

  • Sprinkle pear halves with lemon juice and brown sugar.

  • In a small bowl whisk together the ricotta and honey.

  • Remove pears from oven and serve with a dollop of honey whipped ricotta cheese

LISA SAYS

Pears are a high fiber fruit providing about 4 grams per pear.  Baking them brings out the natural sweetness. The crumb topping provides a cinnamon crunch so this recipe tastes like a fruit cobbler without all the fat and sugar.
