Roasted Pears with Crumb Topping
and Honey Whipped Ricotta

These pears are a great Fall recipe! You can easily double the recipe and serve them cold; they are delicious either way.
Serves 4
INGREDIENTS
2 D’anjou pears
4 tsp. lemon juice
3 tsp. brown sugar
1/2-1 cup water (enough to cover pears halfway in baking dish)
1/4 cup panko breadcrumbs
1 Tbsp. butter, softened
1/2-1 tsp. cinnamon
1/2 cup whole milk ricotta cheese
2 tsp. honey
METHOD

Preheat oven to 350 degrees

Slice pears in half lengthwise and place cut side up in a glass baking dish.

Sprinkle pear halves with lemon juice and brown sugar.

Pour water into baking dish until it covers the pears halfway. Bake 20-25 minutes or until pears are soft.

Add cinnamon to panko crumbs and mix well. In small bowl, cut butter into panko crumbs using two knives

Remove pears from oven and pour out water from baking dish. Top pears with panko mixture and return to oven and bake an additional 5 minutes.

In a small bowl whisk together the ricotta and honey.

Remove pears from oven and serve with a dollop of honey whipped ricotta cheese

Pears are a high fiber fruit providing about 4 grams per pear. Baking them brings out the natural sweetness. The crumb topping provides a cinnamon crunch so this recipe tastes like a fruit cobbler without all the fat and sugar.
