Black Bean and Corn Salad

This salad tastes great made with either fresh, canned or frozen corn.  If using frozen corn, cook the corn and chill before making the salad.  Frozen vegetables can cause a food borne illness, but cooking will destroy any bacteria that may be present.

Serves 8

INGREDIENTS

1 1/2 cups black beans, rinsed and drained

1 1/2 cups cooked fresh, frozen or canned corn

1/2 cup sliced green onions

1/2 cup thinly sliced celery

1 small red pepper, diced

3/4 cup mild or medium picante sauce

2 Tbsp. olive oil

2 Tbsp. lemon juice

1 tsp. ground cumin

Chopped fresh cilantro- to taste

METHOD 

  • Combine first 5 ingredients in large bowl.

  • Combine the remaining ingredients in a small bowl and mix well.

  • Toss the dressing with the bean mixture and chill. This can be made the day before.

Corn and black beans are excellent sources of fiber which provides many health benefits.  Not only does it help with digestion, it also helps to lower your cholesterol and your blood sugar.
